Here's Why:

Of the n items purchased, 30% were sandwiches and 10% were pastries. 30% of n is equal to 0.3n, and 10% of n is equal to 0.1n. Therefore, 0.3n – 0.1n = 0.2n, or  more sandwiches than pastries were purchased.
